Co-owners and sisters Tara Sasiadek and Anna Bystran share how a childhood foraging for food led them to embrace the eat local movement and create a thriving artisan beverage company with a whole lot of BUFFALOVE.
What inspired you to partner with FreshFix? We are new neighbors in the Niagara Frontier Food Terminal, so we were hugely inspired by trading kombucha for local treats like lavender and rhubarb.
What is your favorite thing about working with us? All of our partnerships with local producers and providers mean so much to us. Knowing a web of makers has really enriched our lives, the way we source ingredients for our own products, and the connection we feel to Buffalo as a whole.
Why kombucha? Tara started making kombucha after a brush with cancer in her 20s. More than 10 years later and still cancer free, we both fell in love with kombucha and tea as a way to play with creative flavors. We think of the probiotics and antioxidants in kombucha and tea as a way of caring for ourselves and others.
Why is eating local important to you? We grew up growing and foraging things, proud to have food on the table "from our very own garden." That idea seems even more important now as a way to support and connect to the local community. Besides getting the most delicious and nutritious food from nearby, it also massively reduces our carbon footprint.
What is your favorite vegetable and local artisan product? Honestly there are too many to pick! We love and use Singer Farms Tart Cherry juice in our Tart Cherry Vanilla kombucha and in our own kitchens all the time. When we run out of our own, the pickles from LynOaken Farms or Barrel and Brine are A.Maz.Ing. And we really miss the local vegan market and Biscotti for Everybotti.
What is your favorite local business? We could never pick one, but the many local coffee shops we dearly miss right now, and have had many a business meeting inside of, feel like a second home to us. Public Espresso and a visit to the Downtown Library are like a beautiful daydream right now. Roots Coffee & Tea has stayed open through the whole shutdown for takeout, so at least we can get caffeine close to home! What changes would you like to see in Western New York regarding food? The more that people get to know the local growers and makers, source local ingredients, and swap recipes, the more interesting, delicious, and healthy all our tables will be.
